The documentary piece is structured around an interview with Greg Xavier, a vegan chef, nutritionist and lecturer as well as successful businessman based in Dublin. It also features segments of an interview with Lorraine Fitzmaurice, the owner of Blazing Salads vegetarian restaurant and Deli. The aim of the documentary is to educate and inform the public of a plant-based diet and the benefits that this can have on one's life. The documentary was structured around the interview as Greg discussed his experiences as a vegan in Ireland over the last ten years, and how he has grown much stronger and more confident operating as a chef and businessman in what is no longer a stagnant movement but a rapidly growing world-wide one in which Ireland has awoken.
