Many consider rice as a simple food that mostly serves as a side dish; however, it constitutes the principal source of alimentation throughout Asia, as this deceptively plain staple food demands the arduous efforts of the rice workers to grow it, harvest it, and, ultimately, process it. During this trip into the world of rice, we will discover some exceptional varieties that are organically cultivated with great care, dedication, and love, starting from the fertile, black-soiled coastal plains of Niigata in Japan: the home of the famous "Koshihikari" rice. Likewise, from the rich rice-fields of Kerala in India, comes the unique "Navara" variety with its unusual dark-brown tint, and from northern Thailand's mountainous Chiang Mai region, comes the exceptional, long-grain "Blackberry" variety. In the end, we will share the passion of inspired and creative chefs who transform this humble but exceptional product of high nutritional value into tasty alimentary creations.
